The Chemex Coffee Maker is a pour over style coffee-maker. American chemist Peter Schlumbohm invented the Chemex brewer and it was released by the Chemex Corporation in 1942.
What makes the Chemex truly unique, is the thick filter. The Chemex filters are much more densely woven than traditional coffee filters (which is 20-30% thicker than those used by other pour-over methods.) They help to regulate the flow of coffee while removing much of the body and coffee oils. The filter slows down the flow of water passed through it, resulting in a better developed flavor.
This makes the Chemex a perfect choice for enjoying more acidic or floral light roast coffees (though it’ll brew you a delicious dark roast as well). The learning curve is a little steeper than other methods but most home-brewers have no trouble making really good coffee after a little practice.
The fact that Chemex is both a brewer and a coffee decanter, as well as its well-chosen shape and elegance have made this device an icon of design. The Illinois Institute of Technology,has also declared Chemex one of the hundred best-designed products in modern history.

Chemex coffee is widely considered the better choice for people who are looking for a smoother cup with less bitterness and don’t mind the lack of body. The resulting brew is very bright and clear as opposed to thick and heavy. A cup of coffee created from Chemex is a sediment-free, light, clean with a balanced set of floral notes.
It serves as a dual function of brewer and server. The brewing method is the classic pour over method: The Chemex works similarly to a pour-over with the exception that the filter is inserted in the brewing vessel itself. The conical filter contains the ground coffee in which hot water is poured with circular movements. The Chemex has a slender design and uses a dense filter which slows down the flow of water compared to other pourover type methods. The force of gravity makes the water filter through the coffee bed to extract all the flavor and thus obtain a very balanced drink contained in the bottom of the vessel, ready to be served.
The resulting brew is Because of the restricted flow, the total brewing time is longer than some other methods. However, this longer infusion time allows more time for the flavors to develop.
