This lot from Kerehaklu Estate is one from more complex blocks called Bommegodru Baaju, filled with elephants movement, trees of bamboo, figs, and citrus. The coffee cherries here benefit from the red soil, which is high in iron and magnesium and have a high microbial activity.
The Fermentation process, this harverst season was done on sequential anoxic environment for 42 hours (34 + 8 respectively). With ambient circumstances of shade, aeration, and regular raking, the beans were dried on a parabolic bed for 12 days.
Every 30 minutes, the beans had been raked on raised beds by hand.
