This process, fairly new yet has shown brilliant results. Fermentation is when sugars and starches are broken down and become acids or alcohol. (Saccharomyces cerevisiae converts carbohydrates to carbon dioxide and alcohols in a process known as fermentation)
We have profiled it delicately and the cup has shown pronounced softness in the body and complex acidity.
