          Tastes Like - Strawberry, Yellow Raisin and Mirabelle Plum Roasting Profile - Filter ( Light Roast )  Process - Naturals Varietal - Catuai 100% Arabica Altitude - 1350 MASL Producer Name - Ashok Patre Harvest Year - 2023-2024  Coffee Producers Note -This is a 72-hour yeast fermented natural processed coffee. It is from the SLN 9 varietal grown on our farm at 4400 feet from the block called Line Patte. The Brix of the coffee cherries was 25.2 when harvested and they were put in the stainless-steel fermenters after floater removal. A particular strain of yeast was added to the coffee in the fermenters and allowed to ferment for 72 hours in a carbon dioxide rich environment. After removing the coffee, they were directly put on raised beds for slow drying. The coffee was then dried slowly with constant stirring over the next 26 days.Roasters Note - A well balanced and sweet coffee with bright acidity. Ideal for manual brews. The charge temperature is low, the roast duration is longer with the development time around 1 minute 30 seconds with a DTR of nearly 15%.

          Riverdale Estate Watermelon Process

          Tastes Like - Green Mango, Caramel and Smooth Finish Roasting Profile - Filter ( Light Roast )    Process - Watermelon Process Varietal - SL 9 Altitude - 1450 MASL   Producer Name - Prakashan Balaraman Harvest Year - 2023-2024  Coffee Producers Note - Handpicked ripened cherries are washed in natural spring water and real watermelon fruits are used to ferment in an air tight bag for 72 hours. Temperature and Ph are monitored in the process to produce consistency in every lot, and once the fermentation is complete cherries are then sun dried in raised beds for 25-30 days. Roasters Note - This year's lots from the Riverdale Estate are here, and we are filled with excitement to roast them for you. This coffee has been a favourite and has again been profiled to produce an interesting cup with a concoction of flavours. We found that this coffee develops a fruity and tangy character with a slight sweetness when roasted for a short duration. Keeping the development ratio within the desirable bracket, we have profiled ;this coffee to be filter roast.
