This intensive 2-day course expands on the skills and concepts introduced in the Brewing Foundation course. It is designed for those with prior brewing experience who want to deepen their understanding and enhance the quality of their coffee. Learners will gain advanced knowledge of brewing principles, explore brewing equipment in detail, and develop the sensory skills needed to evaluate and improve their brews.

What You’ll Learn:
Through a combination of lectures and hands-on activities, participants will explore:
- The key variables that influence brew strength, extraction, and overall cup quality
- Techniques for identifying and controlling under, over, and uneven extraction
- How to perform sensory analysis of brewed coffee, assessing aroma, taste, body, and flavor
- The role of grind size, particle distribution, brewing time, temperature, and turbulence in extraction
- How to correctly use tools to measure brew strength (soluble concentration) and calculate extraction yield
- The effect of roast level on brewing outcomes
- The impact of water chemistry on flavor
- How to select the right grinder for different brewing methods
Course Outcomes:
Participants who complete both the practical exam during the course and the online written exam afterward will receive the SCA Brewing Intermediate Certificate, an internationally recognized credential that also contributes toward the SCA Coffee Diploma.

About the Trainer:
Naitik Shah grew up in Muscat, Oman, where an early exposure to café culture sparked his passion for coffee. He now leads the coffee program at Corridor Seven Coffee Roasters and is a certified SCA Authorized Trainer (AST) in Brewing.
With hands-on experience across brewing, sensory analysis, and the broader coffee value chain, Naitik also brings a trained eye as a judge at national-level latte art competitions. His teaching blends global standards with real-world insights—perfect for anyone looking to build a solid foundation in specialty coffee.
