S 795 is a varietal know for it’s cupping qualities. This varietal is grown at an elevation of 4200 ft MSL the ripe cherries are selectively handpicked, sorted and passed through a syphon to remove lighter cherries. The cherries are then pulped to remove the outer skin . The pulped beans are fermented for 12 hours before they are passed through an aqua washer to remove the mucilage. The beans are then soaked in water for about an hour to remove excess mucilage. The coffees are then dried on raised beds for 10 days.
This coffee has a very floral aroma and citrusy sweet lime aftertaste

This coffee is roasted on the medium-light side to retain the coffee’s delicate floral aromatics while bringing out its natural fruit character and sweetness. The washed process gives the cup a clean, refined profile, with a bright yet gentle acidity.
On the first sip, expect delicate florals and dark cherry, followed by juicy mulberry and ripe berry flavours as the cup cools. With a balanced roast development, the coffee carries a pleasant sweetness through the finish, leaving the cup clean, soft, and lingering.
